Carrots

This year a couple things in our garden didn't grow as well as last year due to lack of sun.  The carrots on the other hand grew much better. We have tons of carrots and we like eating them too.  Carrots can pretty much be added to most soups or stir frys or anything with veggies in it.  We even boil them and then mush them so we can feed them to Penelope.  She doesn't really like them but we just mix them with applesauce like we do for most of her vegetables and she eats them right up.  We also have tons of onions and zucchini.  for some reason our potatoes didn't really grow this year and we had a bunch of those last year.  We also only had one big tomato and a couple cherry tomatoes turn red.  I know there are recipes that call for green tomatoes so we will be experimenting with those this year.  The first thing we are going to make is a soup and we are going to bring it to the ward activity tonight.  I hope it turns out.
We also eat a lot of Zucchini and there are tons of zucchini bread recipes.  For my favorite one click here.  And for a great zucchini side dish click here, on this one we usually substitute the shallots for garlic and onions.

You will have to let me know how you like your green tomato recipes. Just yesterday my neighbor gave me one for fried green tomatoes. I am excited to try it.

I am so jealous of your garden. And that is so cool that you get to make food for penelope. i did hear once that you aren't supposed to feed babys carrot juice. A lady in our ward told us that if you steam carrots you shouldn't use any of the juices. idk if its true though.....

Your tomatoes should ripen up off the vine if you have to pick them. If you want them to ripen faster, just put them in a brown paper bag. If you aren't in a hurry, they should ripen after a few days on their own. At least that has been my experience :)
