I know it is a little early for St. Patrick's Day treats but I thought that if I make them early than you will have time to make them too. These Truffles are very easy and pretty tasty too. Tucker loved helping with these.
Ingredients:
one package 9 ounce thin mint cookies (I used the walmart off brand)
4 ounces cream cheese
chocolate chips or white or mint (I did both almond bark with food coloring and semi sweet chocolate chips)
Directions:
Crush up the cookies with a food processer and mix them with cream cheese.
Roll out into 3/4" balls and chill
Dip in melted candy coating
Decorate

They look elegant and yet so easy to make. It's a good thing for me that Fred hates mint....otherwise I would be making these and eating them. These would be a delicate and fancy sweet for a party. I'll keep them in mind for the future.
